This bad boy dish is called 4 layer bacon beef casserole. It is epic. It’s a layer of beef mince, onions, mushrooms, garlic, then topped with a layer of cauliflower mash made with coconut milk, cauliflower and sage. Then another layer of the mince mixture, then a layer of sweet potato mash also with coconut milk and sage and then it is topped with bacon and baked in the oven.

This was not a quick throw together meal, took me a couple of hours from start to finish at a slow pace, although with a bit more organisation and intention I’m sure it could be quicker, the recipe actually says it takes 30 mins prep time and 40 mins cooking time. The cauliflower mash gives it a delicious creamy almost bechamel sauce feel and taste, and the sweet potato mash is lovely sweet tastiness. Plus it will feed the 500 (or maybe about 6 people). It’s probably a dish for making if your entertaining. Definitely recommend.
